Accidental Vegetarianism

Sometimes I accidentally stumble into vegetarianism. I'll still eat eggs and dairy (because I really can't seem to get by without cheese), but after a few days, I'll realize I haven't eaten any meat. Last time I ate meat was a ham sandwich on Tuesday, and before then, I think I had some frozen falafel. That might have been over the weekend, though. (I've had to eat some soup/cup of noodles for dinner at work, though at one point I had clam chowder? It's kind of hard to remember because all the days are running together at the moment.) I think this is mostly because I've been on a Mediterranean food kick, hence the falafel. I also found some awesome tabouli mix at World Market as well as tzatziki sauce at Trader Joe's. I put olives and cheddar cheese mix into the tabouli I had, but I'd love to get some more and add feta cheese and halved cherry tomatoes to it to take for lunch. I never thought I'd say that in my life (because I hate tomatoes in things, but it seems like it would be good in this).
I don't know. It's just kind of strange. The only reason I broke my accidental vegetarian streak is I wanted pizza and only had a pepperoni one in my freezer. I doctored it with banana peppers, marinated artichoke hearts, and more cheese then topped it with tzatziki when it was done and had a salad on the side. It was pretty amazing. Yeah... I still don't think I can swing vegetarianism full time, but it's not a bad deal. I really like a lot of vegetarian dishes, and I eat a lot more vegetables than I used to. I just happen to like meat, too. Omnivore to the core, I guess.
Uh, anyway. I find I'm semi-obsessed with what I can make with what I have left in my fridge whenever I'm home, so I thought I'd share. Maybe one of these days I'll have time to make something from scratch rather than just doctoring frozen food. I'm at 12 days in a row, and it looks like I have eight more days until I get a full day off (maybe a half on Saturday if I'm lucky? We'll see). How bizarre. Back to watching TV and knitting in the little time I have before bed. Later, all.
